Well, it's not really a hack but it's fun to try and much about with.
I found out from a different forum that you can swap the tracks around, so you can for instance the Drifting Silvia on the BMW Europe track. With minimum bugs.
Here is a screenshot that I took of me drifting on the BMW track:

If you want this, follow these simple steps.
1. Go to: C:\Program Files\Codemasters\GRID Demo\tracks in explorer.
2. Then go into the 'japan' folder and rename the 'yokohama_docks' to something like 'yokohama_docks original'.
3. Go back to the tracks folder again and then go into the 'europe' folder, and copy the 'jarama' folder.
4. Then go back to the 'japan' folder and then paste the copy of 'jarama' folder in there.
5. Rename the 'jarama' folder to 'yokohama_docks' (without the quotes).
6. Now run the game and go onto the normal drifting option, and it will load up in europe. Obviously you can do a mixture of the three tracks. Just do the above steps, but in different folders.
Bugs:
Only bugs I have found as of yet, is that the 'drifting flags' don't appear until you are very close to a corner. Also that the opponent score is very hard to get close to. I think this is because the CPU is still using the old track still for the score.(if you get me)
Enjoy, and post some screenies!
