Well where's the fun in that? Might as well just buy a pre-built system and let everything run at default settings.
Overclocking is fun and the constant tinkering and tweaking is all part of it. Maybe Im in the minority on this but I love the constant adjustments and all that.

Definitely not saying don't overclock...
I just don't buy into having to change fan speeds up and down dependent on the task you're running. I have my CPU at 4.5ghz, and my 670 overclocked to the max. All my case fans, and fans on my D14 are running at 5v, and my 670 has its fans locked down to 30% (lowest it will go). Max temps I see are 75ish on CPU and under 60 on the GPU. All while the rig is silent, all the time too.
Temperatures like that are absolutely fine - good in fact! And that's with the lowest fan speeds I can possibly set.
I can't see that at all being similar to building a pre-built system... Completely the opposite in fact. I have it set up exactly how I want it. I love taking my system apart, whether to rewire cabling, or install new parts, but when it comes to changing fan speeds and shit like that every time I want to play a game, I just don't see any fun in that, especially when it seriously doesn't need to be done.
I appreciate that others may like to use a fan controller and monitor temps. But I just don't see the need for it. You overclock, then stress test. In doing that, you find your maximum overclock etc, but also you find the maximum temperatures all of your components are going to get to. You don't need to keep your eye over temps because you know if the CPU only reaches 75 degrees after 2 hours of Intel Burn Test, it's never going to get higher, and so you adjust your fans accordingly.
That's just how I see things.
