I am looking for advice for a build that will be for video editing only. It is not for me, but for a friend who wo simply needs a pc that works. I come into play because I like putting PCs together ;) but I haven't got much of an idea on what hardware goes into a designated video editing rig.

It will be used for Nuke, Premiere and Maya - no playing games here ;)
Hard drive space and speed are big priorities. I was thinking about 2 SSDs and a couple of HDDs

Budget 2000-2500 Euros absolute max
2011 or 2011-3?
Xeon or i7?
What video card?

The whole system just needs to work, no fancy gimmicks, or overclocking plans.

Looking forward to see your suggestions - hope this sparks a discussion, so I can learn something

Which country?

As a base I'd go for a 2011-3 xeon , 32gb of ram (I've got no idea how much ram maya can/will use), a fractal/Lian Li case, a 512 ssd and a couple of 2tb WD drives.

GPU wise I'd probably go for a Firepro GPU/something like a 290 as it seems that AMD cards would be a better bet for the programs they use.
-edit- Turns out that Nvidia would be better if they plan to keep using NUKE.
