For the video card I would second the Gigabyte 570. It will run cooler than the Evga one because of the 3x windforce fans. I have the 580 version and it never exceeds 71 C, and that's after benchmarking.
JUst to include my thoughts on the GTX 570 evga also has a 2.5GB version that is not much more expensive for some reason when I convert ot pounds but there is a $50 or so difference on the EVGA site. When I did the conversion from US dollars to british pounds it came in at 245.59 pounds, that's direct from the EVGA site.

The fan's will be at the bottom and will be hardly visible, so it doesn't really matter. Plus the factory overclock is pretty good to begin with.

I agree with the above comment. Go with the corsair ax series, I have heard really good things about them. I haven't personally used the corsair series (yet), but when I upgrade I will most likely get a corsair psu.

You should easily be able to hit 4GHz and above.
If you want a guide on how to overclock a Sandy Bridge CPU HERE it is. It should be very easy to follow and links to all the programs you will need to check the stability and performance of your CPU are provided.
Does it matter that my MB is a Z68 chipset and not a P67

I'm not sure, but I think the overclock on similarly priced Z68 and P67 motherboards would be similar, I'm not sure how the voltage controls work so I can't give you a definite answer. It should be very easy to overclock above 4GHz

You don't need a different guide. Overclocking would be similar. The only difference is that the Z68 allows ob-board video and it has intel smart response technology.
I have seen in other forums that people with Z68 and P67 motherboards have successfully overclocked their CPU's using that very guide. I used that guide as well and learnt a lot from it as a result.
