I went for a Sandy bridge i5-k series CPU to overclock and as Sandy bridge CPU's produce slightly less heat then an Ivy bridge-k CPU, overclocking should be a doddle with this setup.
As for the SSD/Sata Hardrives setup, one is for your boot/operating system drive and the other for games as we can use part of the SSD for caching.;)
Now for the PSU, now this is overkill for just one single GPU (for example dual GPU's on one pcb) and for two wouldn't be best but for myself. I have always preferred a single GPU then say two in crossfire for AMD or SLI for Nvidia.

RAM Mushkin 1600MHz 16GB(4x4GB) £60.24 no excuse not to go 16GB with this budget, 1600MHz min for some O/C headroom
HDD Corsair Force GT 120GB £105.98 a personal favourite, great performance and sexy to boot
PSU Corsair AX860i £171.31 fairly overkill, but I'd like to have a play with it and gives some future proofing
CPU Cooler be quiet! Dark Rock Pro 2 £57.54 would rather a few extra quid to grab an NH-D14, but this should be close enough
Case ARIAnet Genesis £19.19 scraping the barrel on this one, but might encourage me to dip my toe into doing a custom paint job
