Which HDD for a Raid 1(Storage) and single hdd for performance/game/general?

As I've got 95% of my 'new' rig built and working (ik, I really need to update that sig and maybe post in the rig gallery), im thinking about the near future and my storage config.

I have a Switch 810 as a case and have taken the bottom enclosure to occupy my WC config. So with one enclosure left, there is three spaces available, hence where the Raid 1 and a Single genereal hdd comes into play.
Currently I have the following:
Samsung 830 128GB
Samsung Spinpoint F3 1TB
Maxtor 80GB(really old)

Im looking at Western Digital's range of HDD; Green, Blue and Black.
I'd really like the storage set up to be quiet as possible. Noise irritates me :P
So which of these config would you guys personally use if you were going to do something the same as me?
1.__2x 1TB Greens (Raid 1) & 1x 1TB Blue
2.__2x 1TB Greens (Raid 1) & 1x 1TB Black
3.__2x 1TB Blues (Raid 1) & 1TB Blue
4.__2x 1TB Blues (Raid 1) & 1TB Black
The HDD capacities may change to a max of 2TB.


Other general questions:
--In some sites where I can buy these drives, I sometimes see them advertised as "Single Platter". Is there a reliability and/or performance issue/gain regarding the use of single/dual/triple platters?
--Is it bad to have 'Turn off hard disk after in X minutes' in the advanced settings in window's power options?

I'd go with either of those options, for storage I highly recommend WD Green's, they are very quiet and inaudible when in use, WD Black's will give you the most performance but those are generally louder when in use, WD Blue is more of a drive that sits inbetween a Green and black, I haven't used the very latest WD Blue/Black drives so I can't really comment on noise, I have however used a 2011 model and to me that was fine, wasn't too loud tbh.

Looking at WD's noise figure's there's a 4DB difference under load:

WD Black
