Swapping FX-8320 for I7-2600K

Its like trading in 8 bobcats (8320) for four bengal tigers (2600k) and four housecats (hyperthreading). Yes do it.

what do i need to test to make sure there is absolutely nothing wrong with it?

(If there's something useful you'd like to do with it during this period so it isn't wasting clock cycles...) just leave the system on for 48-72 hours straight, go about using it as normal while it's being stressed in the background. Most instabilities will cave in after that long.
While, yes, you aren't OCing your memory, I found certain Java on webpages would crash an unstable RAM latency. Also make sure you put the system through hibernation and sleep cycles as that can sometimes flag something up.
After that, only time will tell.
 
Ivybridge are the last CPU's you will see on LGA1155.

AM3+ still has another 3 CPU's according to road maps and for sure at least 2. Next will be a minor refinement and the one after will be a die shrink and a major overhaul. IMO you are better off with the AM3+
