thinking of upgrading to x79 soon but unsure how the ram sertup works. I currently have 16gb ram used on my sandy rig, 2 matched sets of 2x4gb corsair ram. I'd like to transfer this straight into the x79 rig but would it work in quad channel or wouuld it see it as 2 sets of dual channel, anyone know if this would cause any stability issues on x79?

Most of the time it will work but it can be hit and miss.

Usually you don't see problems going from dual to quad channel unless you have them overclocked above their rating...

(check to see if your specific modules are capable of quad channel too)

If you use same modules in every spotnt shouldnt matter. The rams are the same most likely, so just make sure you got exactly the same ones in one system. I had bsod earlyer when i used 2 differnet rams with samt volatge and timings, but i also runed others with no issueses. All depends on ur board, but i think u should get exactly same ram models.

unless you're overclocking it shouldn't matter.

In consumer level stuff (laptops, cheap desktops etc) i've mixed and matched RAM without any problems. In your situation you're not even mixing and matching so you should be fine
