I've been looking at one similar to that on XXXX the Asus P5WDG2 WS Pro. Would that be compatible with kentsfield aswell?

Yep either of the above are ideal.

Fatty is right the P5B is good for non multi GPU requirements.

When the PCI-E divides teh 2nd slot is only PCI-E x4 which means a performance hit so you are better off with a 7950GX2

I have heard that new revisions of this chipset (on ASUS) will have some sort of crossfire certification though

Not chipset, It's the drivers.

The new 6.9 drivers enables crossfire support on 965 chipset mobo's
