Corsair are with out a doubt the best PSU manufactures, I have the HX 850w and its amazing.

850w is plenty.

Go for it.
 
A good 850W like the Corsair AX850 will surely be enough. The Seasonic X-Gold series may also be a great consideration as well.

I got an Antec CP 1000 (watt) for my 480's, it's a CPX form so alot bigger than ATX, designed for specific cases. I looked at the Antec CP-850 (watt) and it isn't reccommended for SLI while the 1000watt is. It allows me to add stuff without worry. The 480 is upto 254 watts power consumption and more if you OC, I've seen articles claiming 300watts per card OC'd so if you want to make the rig future proof for bigger OC's and extra hardware you'll need a 1000watt is my opinion. Corsair recomends 950w and up. Guru3D recomends 850w+. I have seen tests that shows that two 480 on a a x58 system only uses 700+wattage maximum, but its always good to leave some room for oc or future upgrades.

I would probably go for a Corsair HX1050w, Corsair AX1200w, NZXT HALE90 Series 1000W, SeaSonic Platinum-1000 80 PLUS Platinum or the CM pro Gold 1000w.

Corsair gives you 7 years warranty on the 1200w. Not a bad deal is it..
 
A good 800 psu will be fine. But if you intend to overclock them quite abit then I would recommend maybe a 1000W.
 
I'd go with a 1000w to give you headroom after blowing a psu myself it's worth being safe then sorry you will have plenty of room for oc add more hdd's etc
