I'm a person like you, who really cares about aesthetics and fast PC, although I won't use it in full potential, but the great feeling of achievement and pride after building a powerful machine is fantastic and also you can proudly say to your mates you have an i7 rather than i5.
on 1155 vs 2011, I think its up to your thoughts, at the end, are you willing to spend couple of hundred buck more to upgrade it to i7 extreme? if yes go a head with 2011, I think haswell-E will be in socket 2011 as well.if not 1155 is very solid choice.

But for the reason above and the fact that you will be keep spending money on you pc, I would compromise an SSD and go for GTX 680, not because of the performance, only because of the name

, this is what I did in my build, I got an SSD 4 month later.
again also for same reason I think you could go for 1200ax, as far as I understand, up to 20% load on AX series, the fans won't spin, once you have powerful water loop with 810, there is high chance that 650,750 power supplies will be the loudest in your rig. also when you surfing web and watching films fan won't spin

although the fan is very quite but every small noise can add up
but after all I think your main noise from rig might come from ray of hard drive
and if you can't find good use of all the power, you can do folding at home for OC3D
