Neither. SATA 3 is backward compatible. Buy a sata 3 ssd and just run it through sata 2 on your motherboard. It'll run fine, just not at full sata 3 speeds, so may be like 10% slower than what it would be if you did have sata 3

7850 is quite a lot better than the 560 but I think it will be worth the wait for the 660ti.
