One thing to remember with X99 is that it also supports quad channel memory. So, make sure you get X4 DIMMS.
I still don't recommend any more than 16gb and a 4x4gb kit shouldn't cost the earth.
Also - Don't bother buying massive speed DDR4 for a 5820k because it's likely that you won't get the memory stable at any higher than 2133 (IIRC, it could be 2400). Your overclock will simply come from upping the multi and volts. Wasting time with the strap is just that, an epic waste of time, because the multi will soon find you your maximum stable overclock and doesn't take hours of messing around.
