But I need to hunt down the bracket someone mentioned above :/

As you can read in the link you provided, it supports AMD sockets FM1, AM3, AM3+ and AM2. Intel sockets LGA2011, 1366, 1155 and 775.

No, the Hyper 212 comes with the LGA2011 bracket, no need to buy it separate.

You're definitely paranoid about the H100. You don't have anything to fear about it leaking for the most part. Although if you're not wanting to spend the money, or think you don't need watercooling, then you definitely don't need it.
