So I am new to water cooling, but I am not timid to try it. So far I have 100% success with every modification I have done with GPUs and mobos in terms of modifying or fixing so I am gunna give this new thing a try.

So I found a full water block from EK that is built for the R5870 lightning II (http://www.frozencpu.com/products/11070/ex-blc-774/EK_Radeon_HD_5870_MSI_Lightning_non-reference_design_VGA_Liquid_Cooling_Block_-_Acetal_Nickel_EK-FC5870_MSI_AcetalNickel_.html#options) (http://www.ekwaterblocks.com/shop/EK-IM/EK-IM-3831109835180.pdf) and I want to know what tubing size I need for this. I cant find any specs on what size tube I need.

most people choose between 3/8" and 1/2" barbs so you would choose your tube diameter to suit. you also get thick walled and thin walled tubing so clip size is something to look at as well. have a look at the tubing sizes at specialtech.

Check your Radiator choice to make sure you can change the barb size like from 3/8 to 1/2 inch (1/2 inch has better flow). Plan your whole cooling system before you buy a single part. Compression fittings are more expensive but make for a very clean install and you won't have to worry about crappy plastic compression hose clamps or using hose clamps that look like you took them off of your car. Stay away from thin wall tubing if possible.

If you use compression fittings make sure you get the appropriate tubing. For example if you have standard wall thickness compression fittings don't use thin wall tubing

Use 45 and 90 degree swivel fittings wherever possible. You can also use anti kink tubing spiral to help retain tubing shape and add color to your rig.

When mounting radiator and fans make sure that you use the correct length screws so you don't puncture your radiator
