What cad packages are you using, also what sim software are you running. As my 780 has been great for general stuff along with the entire workings and stresses on a small jet engine I've designed. With all individual turbine blades ... I was testing for stresses at the locking point.
also I'm guessing your paying for licences for each core of your xeons otherwise a gtx210 would be fine for you only able to use 1 core from your xeons

Trust me, I have used the CAD for a while with these Xeons - so I know what I am doing :) And the GPUs are not that old I have in there for that so I wont be ditching them for a GTX. Just want to add GTX for my gaming.

FOr the record AutoCAD and associated stuff, as well as other stuff too.

Ah thats ok auto cad does not charge for multi core systems compared to ansys. And I said for gaming xeons are not really what would be suggested. Great for number crunching but not really for gaming.

and I still stand by 780's and you keep saying 30" screens what resolution are they running??? At 1080p which would be a bit of a waste id say got 760ti or 770. At 1440p id say 770 or 780. If your going to add a 3rd screen then id go titan just for the ram.

My current screens are 2560 x 1600 Dell U3011s [Widescreen (16:10)], sorry thought I had mentioned that before.

I know Xeons are not traditional CPUs for gaming but don't really want to go though another case, mobo, etc

I may expand to a third, but this will be a wait and see thing.

I can't imagine any type of gaming on dual screens, even minesweeper would be rubbish with a bezel in the centre. On this basis your only actually running one 1600p when gaming, so single 780 would handle it, two would destroy it nicely.

If your talking triple 1600p that is pretty next level and I would imagine having 6gb titans would start to show its benefits, but you won't be maxing anything then.

If it was me I would have two rigs for many reasons, just messing around disabling and enabling GPU's would put me off. The fact monitor setup isn't well suited to either gaming or cad. Xeons aren't ideal, gaming peripherals aren't always so great for work. And then the physical problems to putting 3 cards in there, heat and acoustics wise. For the cost of two Titans you could build a leet parvum ITX rig with a 780 classified and a haswell chip that would destroy all, be silent and cool and setup another desk with a monitor and peripherals specifically for gaming.

As I said, I am looking at a third screen, just need to track down another U3011 at a good price.

I have no issue really with enabling or disabling the GPUs. Ill just look into some form of desktop shortcut I can run that says "GAME MORE" or "CAD MODE" and that changes the GPUs since which are enabled.

And I have acknowledged several times I know Xeons are not the ideal CPU for gaming but I really don't want to at this stage build a whole new rig and end up with two. Looking at moving in 12months overseas and taking two rigs would be an increased pain. So my thinking had been join it with my Xeon rig for now and then later take the gaming GPUs out and put in a dedicated rig.

If you are planning on gaming on 3 screens you don't really need to worry about overclocking the Xeons too much. I use 4 Titans on a single dell 3011 for gaming and most of the time I run my 3930k @4ghz. I get over any CPU bottlenecks by maxing the game settings and in a worst case scenario I can just disable sli, problem sorted.

4 Titans on one U3011 in SLI ... ummm ... wow ... just WOW
This is something I would have considered - maybe - just maybe - but I have to put my two CAD cards in.
But two Titans in SLI are looking like the best bet.

I cant over clock these Xeons :)
I am sure the games will cope even on the highest settings on a Xeon.

I know Xeons don't have an unlocked multiplier but iirc you can get a little oc by changing the bclk. I know its not much but it all counts.:)

AMD lost my confidence with the 7950 and when they announced the 7990 as a competitor for the titan.

also if nvidia is going to call any gpu titan ultra i will go there and slap them.

that's a bad attitude as well.

Kind of ironic you say that.

Anyway my 7950 chews up every game i play. Love it and for the money not very many cards can stand up to it.

It's very unfortunate the OP is Nvidia only. AMD have great stuff as well and if everybody continues this Nvidia/EVGA fanboyism it's just going to hurt competition and leave consumers at a disadvantage.

Also the 9970 will be on par-supposed to be- with a titan/780 at 780 prices... never said anything about a titan ultra(which IMO is just a gimmick).

not really ironic because i used a 6870, which i loved and three 7950s which were just terrible.
it's about not being biased without having any sorts of experience. i had good and bad experiences with AMD, lately the bad ones kinda took over so i stuck to nvidia. not to mention that i didn't really give a f*ck about any of the games they paired with their gpus, i think the whole "ermahgerd so much free stuff look at how amazing we are to partner with devs hurr" stuff is just pathetic. i'll buy a card if it's good, free stuff shouldn't make me buy a worse card.

Yet most AMD cards are on par if not better in games, obviously excluding titan/780, but IMO AMDs drivers keep on improving performance and from what i have seen from nvidia its just a matter of fixing bugs and supporting newer games without actually improving performance all that much..

Just wait till Sept 25th OP too see if Amd interest you at all. If you really won't expand your options then just get a 780.

that bloody 7950 didn't even run BFBC2 properly, their drivers are good at recent games, anything older than 3 years is just a mess.

i second that though

ok well i can wait till sept 25th and check out the 9970.

I originally had a bad experience with AMD so thats why not such a big fan of it, it is partly logical.

Thanks to all of the guys who replied above :)
