GPU choices

I'd advise a single 4gb 670/3gb 7950. When your other monitors come, check what your framerates etc. are like. If they are too low for you, then add another card.
You certainly don't need a 6gb card for 3x1080p.
 
Need no but how much of what we have in our cases do we need I do want some over kill just for good measure what I really want is to see 120+fps in BF3 with maxed out setting.
 
how about telling me will I reach my goal of 120 fps at max setting on bf3 with one 4gb 670/3gb 7950 that's what I want to know

 
I have the GIGABYTE G1.Sniper 3 so if I need to go 4way sli\crossfire I don't care. I'm getting 2 more monitors next month.
 
Anything above 2 cards in SLI doesnt really add to performance. Quad SLI can even reduce performance.
I think you'd be fine going with 2, 2gb 670s, and overclocking them to bring frame rates up a bit. You should be able to keep above 60 FPS - but regardless of what card you use, you'll never get 120 FPS using all 3 screens.

However - if price isnt really an issue whatsoever - which I'm guessing it isnt if you're getting 3x 27inch 120hz screens - even if you only see like 5 FPS total improvement, you may prefer to go with 7970 or 680 crossfire.

As I said though - I'd still just recommend staying with 2gb 670s
