Get the 670s instead, but that should work fine yes. Although - even 1 670 is more than capable of running a single 120hz monitor (probably wont max out the FPS but you wont be able to tell much difference)
 
You can manage that on one 1080p screen with SLI 670 2gb.

Across 3 screens it's unlikely...

But why do you need that?

1 screen = 1 card IMO. You arent really going to notice the difference between a single 670 getting around 75-80 FPS and SLI getting 120 FPS tbh. If you have the money to throw at it, go ahead - but it is such a waste.

You cant really see much difference between 60-120 - even less so between a single 670 which will get you 80 FPS ish on most games, and SLI to get 120 FPS.

As for the movies - they're only recorded at around 24 FPS - even the blockbusters. Makes no difference whether you have a 120hz screen with 670 SLI or a single 60hz screen with a 610...
Anyway - I personally think you'd be better off with a 60hz IPS screen if you watch a lot of movies.
 
One 27inch 120Hz monitor is all you need for games, and BF3 looks gorgeous. You WILL get 120+ fps with ANY 670 / 680 SLi. And as James said, get another IPS (e-IPS) screen for movies. You'll love it.
