Dedicated Folding Rig!

I Will be building a Rig especially for F@H, And want the rig with the best PPD For UNDER £500.
Any help on chosing components would be wicked!

If you're doing Linux, IIRC GPU folding won't work. So just go for the best processor with the most threads for SMP on the CPU that will fit in your budget. Overclocking is a good way to boost points as well.

I Could Re-use an old HDD With a copy of Windows On it though, so, would a GTX 560 Ti and an i5-2320 be a decent combo?

You could save money by getting the cheapest hard drive possible or by skimping a little on the cooler.

I am indeed, although my 'today' score has been stuck on 0 for a little while now - slow WUs, it seems

Aah, What's your average PPD?

My average PPD is around 24k, but I do use the computer, which would knock a maximum of 1000ppd off. I've had some WUs that give more, but i'm currently stuck at 24k
You could probably get that folding rig I listed to yield better results as Sandy clocks higher - my 24/7 clock is 4.5GHz.

Yup. I've had some financial woes of late, and thus I don't have a GPU to fold on!
What you see in my sig has all been from SMP folding only

Well, i probably wouldn't advise anything from this generation, just because the price premium is high.
A 560Ti (regular or 448 core) seems to be a good balance of price to PPD.
Keep your eyes out for good deals though as there have been quite a few on the For Sale/Wanted section
Just be careful about your PSU, as if, for instance, you find an amazing deal on a GTX480, I don't think the PSU that I listed before would be sufficient.
