Bit-Tech have released a very good review of 6800U's vs 6800GT's in SLi
Summary:
Basically bit-tech have said that as long as a game supports SLi, it will run extremely fast and improve your gaming experience. Where the game does not support SLi, this can be forced, but does not make a difference. There are big performance gains to be made, but only on supported games.
Nvidia are working on support for SLi, but this is taking time.
In addition: 2 x 6800GT's will be a very effective solution, rather than 2 x 6800U's. The price per MHz is much better and OC'ing is (of course) a strong option to OC to an Ultra level.
As we know=this setup is pricey and recommended is DFI's SLi board.
