Stick to one 7970 for the time being.
Think about upgrading when it comes round to buying the screens.
Next generation cards should be out by then so there's not much point in spending loads on cards now if they'll only get cheaper in the future - or if they'll be better cards for the same price in the future.
A single 7970 will max out pretty much every game at 1920x1080 anyway.
Yeah like James says. May be worth sticking to one really good 7970 such as the lightning and then using the money you saved to contribute to an upgrade in the future rather than blowing it on 2 cards right now. Especially considering you're currently only gaming at 1080p
Edit: put it this way. my overclocked 560ti runs crysis 3 smoothly on medium settings @ 1080 and that is quite an old card now. Think what a 7970 overclocked can do. On top of that Crysis 3 is optimized for AMD cards of which mine is not
