2x 590 for 3 1080 monitors is a total waste of money, you would be much better of with 2 580's with 3 1080 monitors, maybe consider the MSI 580 Lightning to squeeze some more power out of the cards and run everything maxed out. unless you plan to get 3 2560x1600 monitors you really dont need 2 590 cards.

your probably bettwer off getting 2 gtx 580s but the 3GB versions (since your doing surround) so you wont run into vram limits
