Which Case and PSU to get? Opinions - Please advise :)

Yeah it'll be fine using Mac OS. If you want fans that look good then get the Corsair SP120s, they perform nearly as well but look a hell of a lot better. They have interchangeable colours and one of them is white so it will look good.

Alright Great You've definitely been a great help I will start thinking alll of this over and hopefully getting started soon...at least ordering lol

Is gagabit better than asus? when it comes to motherboards?

I always use Gigabyte for my builds, Asus have a nice UEFI and software but I've always found the actual quality of the hardware on Gigabyte boards to be better. Just my opinion though.
