It makes no difference in performance choosing between a 2600k, 3770k or 3820. They are identical. IB clocks slightly lower but has better performance clock for clock. On water cooling you'll be getting 4.7-4.9 ghz if you do it right on IB.
IB has other advantages that some people may make use of:
If you want to fill all 4 ram slots then it has a more stable memory controller.
If you will be running 2 pcie3 gpus then pcie3 on IB is slightly better.
IB is more energy efficient.
If you don't care about these then you might as well get 1155 Sandy.
No point getting a 2700k if you are overclocking. Save the cash and get the 2600k.
Truth is you don't need to upgrade for gaming - I would wait for Haswell.
If you do want to upgrade for gaming just for the heck of it then get a 2500k/3570k.
If you will be doing anything more cpu intensive with images for example then get a 2600k/3770k.
If you just want to spend your money then get a second 7950. That will be the best option for improving your gaming experience.
