Ugh pleasure overload..

I think it is all preference, mine is about medium rare by British standards. There are some things that always hold true, don't turn it more than once and searing is a must to keep the juice in. I personally prefer steak cooked on a charcoal barbecue with real mesquite charcoal.
 
I usually have to pan fry 'cos my steak fiend son gets rather upset if I don't make a sauce.

You can use a health grill, catch some of the juices and then make a sauce, but what a lot of messing about that is - haven't tried deglazing a health grill yet - might be a bit liquid to steam explosive.

Cooked some Marks and Spencer perpared steak last night and there was so nearly a lighter band in the middle, but lately I just cannot catch a steak before it is at least medium-well done - too easily distracted I suppose.

Cracked pepper on the steak reminded me that I have a small mouth ulcer, which for a while felt about twice the size of my head!
