I am usually copying large files and folders, gaming, Photoshoping, web-browser, etc.

I will be using a WD Caviar Blue or Black 1Tb as my main storage, but the SSD for the OS and some programs such as my main games, Photoshop, etc.

Which would be faster overall?
 
I'd suggest going for the Corsair Force 3 drive. The $30 extra will grant you a bit more space for a few games as well. SSDs are pretty fast now, and even if you do get a few seconds difference, is it really worth it? What matters the most are the day to day tasks and overall response you'll experience. The Force 3 is a good one to consider.

How about two Momentus XT 500Gb hybrid drives in RAID? So 1Tb total storage and apparently it would give my near SSD speeds.
