Just ran this for another forum but someone may find it interesting.
I am not very good at playing the game so when it said near the beginning "to lose the cops" I did not do very well but I did record the FPS and some graphs.
GTA V totally maxed @2160p

54107, 841328, 34, 181, 64.311
There is a constant 8gb of VRAM in use for the game.
GPU usage probably would have been better if I had not crashed every 2 seconds.
