Apps I use in OS X:
AdiumX - MSN
CyberDuck - FTP
VLC - Region Free DVD Player
StuffIt - Like winzip
TinkerTool - Tweaker
USB Overdrive X - Mouse Tweaker (good for disabling mouse accel)
X-Chat - IRC (I mainly use this because I've always used it in linux)
CoreTemp - Temp monitoring for core2duo/coreduo cpu's
PitHelmet - Addon for Safari, good for blocking adverts etc
Clutter - Allows you to put Albums on the desktop and interacts with iTunes
Gimp/Gimpshop - Free Photoshop Alternative
Flip4Mac - WMV support
MenuMeters - allows you to add stuff to the menu bar
Little Snitch - tells you if apps try to connect to the net (sort of firewall I guess, not tried this one)
& Obviously iLife

Cant believe I missed this thread...
equk has listed a lot of the apps that I used to use.
I also used Transmit for my FTP client, AppZapper for removing the entire contents of a program, SpeedTools for doing maintenance (defragging and such). Uhhh, let's see. I can't remember a lot more off the top of my head since I don't have my Mac to refer to any more
