Home Server Advice

Hi,
I'm currently running Plex / Plex Server from my iMac 2.4 Core 2 Duo.
It runs fine on the machine itself however, when streaming it stutters playback on certain films.

I'm looking to build a dedicated home server with the main functions to run plex server act as File server and a general central backup for my machines.
I was initially thinking of going with an AMD quad core to keep costs down, although not to keen on AMD to be honest. So I'm thinking something like an i3 ivy Bridge dual core.
As just a standard server the i3 is fine, just not sure how it would handle the streaming / transcoding from Plex... Any ideas?

All suggestions, ideas and comments appreciated

I have a 16TB fully redundant home server that i use for file serving, media storage and timemachine backups. The only difference is i use XBMC and not plex.

I have absolutely no trouble streaming BluRay rips over the network or over the internet (reduced quality).

The specs are as follows...

i7 860s
16 GB Vengeance
GA-H55M-UD2H
RocketRAID 2720SGL
8 X 2TB WD Green drives
Running FreeNas with Raid-z config

Hope that gives you an idea.
