Help needed. What PSU should I get?

Hello everyone. As the title says, I need some help with picking the right PSU for my first build project. I recently started buying all the components and I wont be finished the build until around November however I'm stuck trying to figure out an appropriate PSU. So far I'm thinking a Corsair HX 1000. The new one with no link or fan test button and 80+ platinum rating.

My shopping list consists of:
Maximus IX Formula motherboard
I7-7700k
32 GB Corsair Vengeance RGB ram
ASUS Strix 1080 ti OC (SLI config in the not too distant future)
250 GB SSD (possibly 500 depending if I can get a good deal)
1 TB HD.

Other parts include a 27 inch 1440P monitor, either a K70 or ASUS claymore core, and either continue using my M65 mouse or go for the spatha.

All of this is being housed in a Corsair 750D airflow edition and will be cooled with a custom loop from EKWB. CPU, VRM, and graphics cards will be included in the loop. Pump is a D5-Revo pump and res combo. Fans for the time being will be a mix of Vardar on the 360 since they come with the kit and ML Pro 140mm on the front with a 280 rad.

So back to the original question. What PSU should I go for? I keep hearing that the new pascal architecture is very power efficient and most reviewers are saying a 850 should be fine. I have gone through a couple online calculators and entered in all the info and have gotten 850, 1000, 1200, and as high as 1600!!

I do intend on overclocking the system as far as it possibly can go so its running on the verge of stability. The system wont be used all day every day, only a couple hours a night after work for gaming. Yes it is overkill for just gaming but hey, its been a dream for the past decade so why not build it now.

Side question. Any name ideas for it? Currently just calling it O.K. (over kill)

Any help I can get would be greatly appreciated and if there is any interest I may post a few pictures of it while I'm building.

I've looked at EVGA however my local computer store rarely stocks their higher end and most companies refuse to ship to where I live. UPS, DHL, and FedEx wont ship to my address, only canada post will and most online companies wont ship that way so my options are pretty limited since corsair is about all my local computer store stocks and they aren't even that local, hour and a half drive one way on the highway.

Have them ship it to someone you know can receive the package, then go pick it up from them if it's a closer drive.
 
So far that's the plan for the loop from EKWB. Having it shipped to my bosses place but that's quite the drive. The joys of living in the country in Canada. No one is willing to make the drive. I may end up special ordering one through my local computer store if they can get one with a high enough power rating and not charge too much extra for the special order. I'll figure out logistics of it all once I figure out what PSU I'm getting. I want to factor in fuel expenses and shipping costs ect versus having my local PC store get me one. May not be skimping on parts but if I can save a buck on shipping or gas to pick it up I will.
 
If you guys work together, why not just let your boss bring it work? That way you don't have spend more in gass that you normally would. Any of the newer corsair PSUs should be ok.

I'm a long haul trucker. I see my boss maybe once every other month when he decides to come in to the shop. I've looked at all options for delivery and there isn't much because of where I live. It really sucks.
