The XFX nForce 780i SLI is a good board, my friend has that board, I got the EVGA 780i FTW which should be almost similar.

I dont know if you would need water cooled ram, I got 2x2gb OCZ Reaper HPC 8500 running at 1000mhz 1.9V and they only feel warm.

I would recommend water cooling the GPU too, reduces the noise quite at bit.
