GTX 580 video input problem.

I'm pretty sure the card is artifacting, in which case the only solution would be to return it, however you're saying it only happens with some games and that screen shots don't show the problems, which is interesting. I'm almost sure that your card is fubar and that it needs to be returned, however I suggest you test it with another pc if you can.

The other thing that could case this would be interference, do you have anything magnetic or anything that could possibly interfere with the monitor near it? Try placing the monitor somewhere different and try a different monitor altogether.

Well, there is nothing magnetic but I have my computer on top of the desk and have the wireless router right next to it. Could that cause interference? And this doesn't happen on any of the Assasins creed games or the witcher 2 along with many others. I have only experienced it on another game (FSX) and I was able to fix it by going into windowed mode. I don't know if this will help, but usually when I start the game everything will be fine, its only after a few minutes that this starts to happen.
 
I did a quick search and people are saying that they are having problems with tessellation turned on and turning off tessellation works for them, give that a go first.

I also have a wireless router next to my screen but have no problems, but that could be causing a problem for you. Try switching your router off and play some dues ex.

If you've only experienced it with FSX and Dues Ex: HR then I guess that could rule out artifacting (although you could do a stress test). I'm guessing it could be a problem with the game, as Dues Ex recently came out and may have bugs (not sure about FSX).
 
Check the temps your card is getting at, it could be broke, but perhaps try it in your backup rig?

To rule out the monitor issue, alternate between DVI and HDMI on both the monitor and if you do, another monitor/TV
