GTX 580 + GTX 680

The only cards that allow different cards to be ran in pairs/trio/quads outside of a lucid motherboard are the amd cards of similar series, ie 6970 with a 6950, 5850 with a 5830 or 5870, 7950 with a 7970 ie matching first 2 numbers tho its relatively pointless still.

it is stupid to sli two different cards as one will harm the performance of the other, i remember reading a year or two ago that when a 5870 and 5850 were crossfired they had less performance than 5850 cf. even with that i have never heard of sli working on different nvidea gpus, except a 590 an a 580 (it works becouse a 590 is technically 2x580's underclocked )

As has already been said no you can't as they are different GPU's but there were some exceptions some time ago I believe the GTS 250 could SLI with 9800gtx+, however that's not really important

In lucid they had a little lower performance as it doesnt give 100% from each gpu you add in, but in crossfire on a normal board they should be about the same (counting in variations in the test +/- a little each run) as it tones down the better of the cards to match the weaker one(s).
