Because the brand Star Wars literally has world wide renown and any other space game immediately fails in comparison to the profits it would bring in. So. It's worth it.

Meh Disney could in theory have given someone else some rights. They never officially shut down the Star Wars 1313 game that was being developed by someone else.

But even if it was Star Trek, still a famous brand. Still worth doing another space game for them for the sheer amount of profits it would hold.

Please let it be X-Wing or Tie Fighter. I can't think of much else that is a global franchise that's going through a bit of a resurgence though. Enduring kind of points the finger at it being an older franchise.
