Wich GPU is best for me?

Hello everyone!

I am planning on buying a brand new custom computer for the first time but I have trouble finding out what graphic card I should use...
I'll already make it clear that I'm a first time builder and only spend a month researching stuff about hardware so I'm not pro a this so forgive me for asking silly questions.
Now, here's the rig I think will suit my needs, also suggested by other forum members:

CPU - Intel Core i7-3770K 3.5GHz Quad-Core Processor
CPU cooler - Noctua NH-D14 65.0 CFM CPU Cooler
Motherboard - MSI Z77A-GD65 ATX LGA1155 Motherboard
Memory - Corsair Vengeance 16GB ( 4 x 4GB ) DDR3-1600 Memory
Hard drive - Crucial M4 512GB 2.5" Solid State Disk
- Samsung Spinpoint F4 2TB 3.5" 5400RPM Internal Hard Drive
Video Card - EVGA GeForce GTX 680 4GB Video Card
Case - ?
Power Supply - Corsair 850W ATX12V / EPS12V Power Supply
Optical drive - ?
OS - WIndows 7 Home Premium

Basically I have 5 main concerns before I buy my build. I'll state right now that I'll use this build for primarely gaming and some video editing.

1. The primary question being wich gpu card is best for me?
What do I expect? Basically gaming at the highest possible resolution so I can immerse in the game and its in general more fun. Also ofcourse I wish a very good fps. I also want to use graphic options on games wich enhances the graphics itself on the game. Wich should I use? There's a debate between GTX 670 or 680, I do no know a brand to go with either, neither do I know if I need SLI for good FPS on these high settings or 2gb or 4gb.
The games I'll be playing will be Skyrim, Crysis 1 or 2, Battlefield 3 and more demanding games like these.
What do you guys think I should go with?

Offtopic:

2. As you see I picked Samsung as my HDD, as I don't know much about these HDD's are these reliable? Do these have low/no failure rates like I keep reading about other HDD's?

3. I'm totally clueless about optical drives? Wich one should I get? Preferably a non blue-ray one.

4. Is my RAM enough for my needs? (Gaming and video-editing, not to extreme editing though). Should I upgrade my OS in case I need more RAM ?

5. Stupid question but wich cases do you guys like? Post 'em below so I have a look at them I'm also clueless about cases.

If you guys do not wish to answer the offtopic questions I understand. I'll post it somewhere else. If you guys see something like for example the motherboard and you know a better one please do tell me as I haven't ordered anything yet! Sorry for the huge post.
Thank you in advance. :)

There's so little difference between the 670 and the 680 - the slight performance doesnt justify the large price difference, so we always recommend the 670.
If on 1 1080p screen, both cards will max out the FPS of the listed games, so you may as well just get 1. Because of this, you only need the 2gb version. If you do plan on going for 1400p screens instead of 1080p, which is slightly mad for gaming - then the 4gb may suit you better, especially if running multiple screens.

The RAM is absoluitely fine.

Also, unless you go for SLI, drop the psu to an AX650 - if you do go SLI, get the AX750. 850w for that system is overkill.

As for the optical drive - it really doesnt matter. If you really feel you need one, get the cheapest SATA DVD-RW available.

@james
The monitor or game I want to run it on would be 2500x1600, its just awesome, and will look for 120hz. For now I will use 1 screen.
So can 1 card handle this you think? 1080P they might be able to handle that but how about 2500x1600 single monitor?
And Ok I'll stick with 16g ram if you really think this is enough for gaming and video editing.
I'll stick with windows 7 Home edition then too as the cap on that is 16 and since I wont be getting more thats enough, assuming 16gb is plenty.

Oh my god, you messaged me like 3 hours ago asking all these questions, I spent ages typing a really in depth answer to my question and you just totally Ignore me, even worse you didn't even thank me

He asked me too, i answered all of his questions and so on.

Marston read our PM's bro! All your answers are right there mate :)

My bad if I didn't thank you and you're right, I pm'ed someone else aswell. I want to know the opinions on a few people not just 1. Sorry if it sounds rude I just want to be sure m8.
I once went on the opinion of 1 guy and he screwed me over on quite some cash.
Not a mistake I'll make twice so thats why. Then again thanks for letting me know your answer. ;)

Not yet. I have to look into a good one. I just wanted to sort out a good build first m8.
By the way, the people I messaged I think are very knowledgeable people so don't take it the bad way.

Seriously forget the 2500x1600 - especially if it's 120hz - you're gunna be looking at a massive price per monitor there.
Go for 1080p, 120hz if you really want 3d, if not go for IPS.

3, 2500x1600 120hz screens sounds to me more like a dream list than a seriously build...

Nah no 3d monitors for me.. I have a supposed to be good 3d tv but I don't see much difference so... I like the base quality on it. I'll look into the monitors later tonight, I'll look at the prices and if the 2500's are too expensive I'll go a step lower.

Yeah if you wanna go triple screens go for 1080P ones, IPS, 60Hz and 8ms response time at the most. 3 2560x1600 screens is gonna cost you soooo much money, and it will be money wasted.

Not planning a 2 grand back up rig are you too mate? :D

Seriously though - 3 23/24inch 1080p IPS screens will be more than enough to immerse you in gaming :)

Hmm ok I might sound dumb and I might be especially that I know nothing of pc hardware a month ago, but what does the IPS stand for? What does it do?
