Would this monitor support 2k 360hz? In between the other two modes? I don't see why it couldn't.

No sadly. It is a shame it does not work that way. 1440p on a 4K screen is a strange one. Would either not use the full screen, or be scaled and look weird. 1080p has integer scaling working for it.
