I'm waiting for the 2TB variant to drop. The 970 EVO+'s are €220 for 2TB vs €360 for the 980 Pro, Gen 3 vs Gen 4 but am I really going to notice?

If you transfer large files on a daily basis, then probably you're going to see the transfer speed go faster and the transfer size increased.
But other than that and in your every day life? I highly doubt it, not in a matter than will actually matter and be reflective of the cost difference.
