I know 2, 670s isnt complete overkill, but when spending the money on a second is restricting performance elsewhere, for example the 3930k and stuff, then I'd definitely say one. Can always upgrade later so it's not the end of the world

I've decided to go for a refrence Gtx 680 since their inbetween and save some Money and just grab a 3770k

Dude, you're not making a good decision imo. I would go with M&P's suggestion of getting the 3930k and a 670. You said you will be gaming on a single screen and you may upgrade to 1440p in the future. The 670 will still be sufficient at that resolution.

I swapped out the i7 3770k with an I7 3930k with a Gigabyte GA-X79-UD3 and put a gtx 670 FTW in their which is £100 less then a gtx 680 and has the same core clock speeds so shouldn't really see a diffrerence how does that sound?

It might stretch your budget but that is one serious board so yes i would recommend it

No point whatsoever in the big bang if you have 1 GPU. The X79 UD3 is great, so is the MSI X79 GD45 8D

I like my X79 GD45, obviously its not going to be as good as the other mobo's in the X79/2011 range, but for the price and with my 3820 its a cracking little system. I would love one of the EVGA X79 boards and Gigabyte have some epic looking boards coming out soon.
