im tempted to leave the 140mm fan on without the resistor - they were quite loud without it but i would imagine the 140 is quieter than the 120

I run mine with them fitted all the time tbh. The 120 you can hear but the 140 is quiet no matter what imho.

Looks good. Don't the PCI cables block the air to the top GPU the way they pass sort of at the rear left corner of the card? I noticed that it made my temps a tad higher in my Phantom having them like that so I put them through the lower hole and made them go all the way down before they go to the right. Might not look as tidy (depends on which way you look at it) but my temps are lower. Other than that.. This setup looks familiar somehow even though I've gone down the Intel/Nvidia route

The temps are more than reasonable so its not a cause for concern as I dont intend on overclocking refence cards (maybe for the odd benchie but thats it)
