How much would server 2008 put me back?

Using Server 2008 for the purposes you mention really is overkill. Server 2008 is nowhere near as user friendly as XP or Vista and setting it up properly can be a right ballache, especially when you are new to it. If you are keen to get into server technology, a cheaper and easier option would be Windows Home Server.

Its supposedly 20-30% faster than vista and runs great as a workstation

Where and how much would it cost me to get a single license/1 workstation or w/e

The results on google are obviously geared towards companies
 
How often do you reinstall? If its < every 9 months, then you can use the trial version of it and just re-activate it 3 times.

That mean for CAL is legitimate if it`s not going to be used as a traditional net server ? I don`t see any "... going to use it as a gaming device..." clauses.

Kinda, we have some build variants at work. Going through testing and such.
