Consider this. An E8500 (or E8400 for that matter) versus Q9400.

Clock wize, the E8xxx overclocks massively. Still a dual. 4G+ easy.
The Q9400 less so, around 3.25 ish.

.. keep in mind it may be difficult to obtain a classic overclocking mobo. Very good memory and lots of it.

Now, non Windows based OS(s). Lion/Linux - which know what to do with cores.

Out of the 2 cpus, which would you go for ?

(think desktop and maybe a mild fileshare)

Yep, Q9400, no doubt. I have a home server that originally had a Core2 in it, and I upgraded it to a Core2Quad, and it made a HUGE difference in regards to being able to stream data/music/video to one client, while still having enough power to allow other clients to still connect to, and browse the server. When it was just the dual core, it could pretty much only do one thing at a time.

This is just one example. It's double the cpu power, enough said.
