Do you know if intel is going to release anymore coffee lake CPUs with more cores and threads?

They won't release Coffee Lake 8-cores as far as public knows. Tom might know more. They will release Cannon Lake 8-Cores which will be evolution of Coffee on Z390 chipset, but that will be around the end of the year. Sept-Oct maybe. Ryzen+ will be releasing soon if you want to go AMD way.
