Correct me if I'm wrong, but wasn't the last big memory price surge caused by greed? And they also said at the time that it was a shortage issue? If I'm remembering that well, then forgive me if I call BS now.

It's always greed. These companies are only accountable to shareholders, and they always want more $$$. At the start of the year, prices were declining. I'd bet they reduced production to account for that and knew it would cause a shocker later this year (IE now).
Since all of these memory manufacturers work on HBM memory, they must have been aware of many of the recent AI buildout plans. They didn't prepare for it, as it is more profitable to milk it and increase production after demand rises.
AI capital expenditure is insane, and the end of Windows 10 support and subsequent demand in new PCs isn't helping. Just another reason for regular folks to hate AI, I guess.
