Most brands of motherboards are 'the best'. The ones you have to look out for is the ones which aren't good quality. Avoid those. Motherboard quality is also based off personal opinion, one person may have broken 3 Gigabyte motherboards and loved his DFI. However, someone else may have broken 3 DFI boards and loved his Gigabyte.

The main thing you need on a motherboard is capability for your parts, for example - some older boards (P35) may not allow high end DDR3 RAM. However, some of the newer boards such as the P45 and the X38-48 will allow high end DDR3. Newer chipsets are also smaller, this means;

- Less power needed (but this is catch 22, the parts you will use for a high quality motherboard are top of the range).

- Less heat emitted, more 'overclockability'.

You would have to check around. Make sure the motherboard you buy has the corresponding CPU socket to your CPU (in your case AM2+). Some more opinions;

- In this modern day and age - for a mid/high end gaming system - 8GB of RAM is complete overkill. I would reccomend 4GB maximum.

- The 9800GX2 is cheap, but has never been known as a performer compared to higher series cards. I'd opt out for SLi GTX260's, cheap and nice performance.

I'm not quite sure on this one, not read many reviews on 4870x2 CF. But this is a question you can google.

It works just like a normal CPU.

AFAIK, 'server CPU's' work everywhere.

I'm unsure of that. Maybe because server CPU's are expensive.
