New build gpu / cpu choice

My daughter is getting some of the old stuff I've lying about in the spare parts bin. She's 7 now so old enough to join the PC master race :p
We've knocked up a runner with the following bits:
Be Quiet 750W Gold PSU
Be Quiet 500 case
Some Noctua industrials in 120mm and 140mm form (2 in front pulling in, 3 at the top exhausting out)
Asus Crosshair VIII X570 Hero
32GB DDR4 2666 (Infineon)
2 x 500GB Samsung 970 EVO pluses
AX200 WiFi / BLE 5 card
Be Quiet Dark Hero cooler
Steelseries Sensai 10 mouse
Cherry MX 2.0 Keyboard
Dell 2518 2K 60hz monitor
Xbox S controller

CPU is currently a Ryzen R3 2300 and GPU is a Quadro P200

So we have something that booted into Windows 10 Pro, got an upgrade to Win 11 Pro and will play some basic games. The core seems OK so I'm thinking about a cpu upgrade to say a 5600? and throw in an older GPU - something strong enough to drive an Oculus Rift S in Elite Dangerous

What would you propose? Let's say max budget of 500

PS - holding back the wet stuff for a while but we've some rads (2 x 240, 1 x 360), a TechN block and Aquacomputer D5 pump / res combo.

In the end she got a Ryzen 5600 (non X) and an Asus Strix Radeon RX 6650XT + 32GB (4x8) Corsair Dominator 3200 DDR4. Cooling by a completely oversized cooler on the GPU by Asus and by a completely over engineered setup on the CPU by me featuring a TechN cpu block into a Aquacomputer Airplex 240mm rad fed by a Aquacomputer D5 PWM mounted on an Aqualis 150mm reservoir. Cooling handled by an Aquaero 6LT, fans are Noctua industrials - 2 x 140mm at front pulling in, 1 x 140mm at rear pulling in in and a 120mm on the rad at the top of the case pushing out. Ran into clearance issues with the ram height...
 
If you can afford it I'd go a 5800X3D update your ram to 32GB of 3200 CAS 14 or 3600 CAS 16 and if you need a GPU a 6700XT could be got at a decent price, I don't know how much that'd be in great British beer tokens but it would really give you some great performance.
