is there any point in deliding a 4790K?

The benefits of deliding a 4790k is much less than previous generations.

Because Intel has greatly improved their thermal interface material (TIM), the thermal benefits now will be minimal.

As for additional brackets etc, I'm not too sure. There are specialized waterblocks for a few chips, but i doubt there will be a 4790K version.
 
Given that Intel apparently now use a "Real" tim on the die, I'd say no, there is no real point.

Yes you can get a de-lid bracket for the socket if you so wish to de-lid it.
 
After using my 4790k for a few days, so far it idles at around 25°c (on H100i), playing Watchdogs over hr later, it was sitting at 65°c, and that is running at 4.6GHz, I've managed to get stable 4.85GHz without too much messing about, and could of got more out of it, but didn't have the time to sit there and do it.

So in my experience so far, I can't see any reason in which you would need to delid it unless you are going complete hardcore overclock.
