How the fluff do you overclock with an Intel Chipset?

I've recently got my DFI DK P35-T2RS mobo, and this is my first Intel Chipset based enthusiast mobo (P35 in this case), all my past experience is with Nvidia chipsets. I gotta admit, I'm completely stuck here.

I've been trying to figure out how to unlink the RAM from the CPU, but I've been reading up at a couple places and they're saying that this can't be done with Intel Chipsets? So how do I go about preventing the RAM from reaching super high speeds that it is incapable of opperating at?

I'm trying to OC my Xeon E3110 to 4Ghz from 3Ghz, so I tried 444*9 @ 1.4v, but doing this brought my RAM up from 800Mhz to 1066Mhz, which it doesn't seem to be capable of even at 2.1v.

I really need a helping hand with this one, any help would be mucho appreciated :)

Clock down the memory frequency before going for higher FSB, would be my first guess, but since I've never clocked with an Intel based chipset, I have no idea. :P
