How the fluff do you overclock with an Intel Chipset?

I've recently got my DFI DK P35-T2RS mobo, and this is my first Intel Chipset based enthusiast mobo (P35 in this case), all my past experience is with Nvidia chipsets. I gotta admit, I'm completely stuck here.

I've been trying to figure out how to unlink the RAM from the CPU, but I've been reading up at a couple places and they're saying that this can't be done with Intel Chipsets? So how do I go about preventing the RAM from reaching super high speeds that it is incapable of opperating at?

I'm trying to OC my Xeon E3110 to 4Ghz from 3Ghz, so I tried 444*9 @ 1.4v, but doing this brought my RAM up from 800Mhz to 1066Mhz, which it doesn't seem to be capable of even at 2.1v.

I really need a helping hand with this one, any help would be mucho appreciated

Clock down the memory frequency before going for higher FSB, would be my first guess, but since I've never clocked with an Intel based chipset, I have no idea.
