As for PSU, keep in mind that if you get a corsair it comes with a 7yr warrenty. Thats enought to keep for "2 builds" assuming you upgrade every 3-3.5 years (i like to buy high end and keep for 4-5 but thats just me). So in that istance i'd say get the 850w, if you do plan to sli/ crossfire or water cool.
I'm also a huge advacate of Corsair cases, very functional and look great. But the Coolermaster ones are also quite nice.
I've only owned 1 Silverstone case, the TJ11 and it's basically put me off Silverstone cases.
I do hear lots of good things about the FT02 though and think it's supposed to be a very good case. If you don't mind modding I believe you can get a 3x180mm rad in the bottom, which should give decent performance.
I too would recommend a decent soundcard if audio is important to you.
Also, I wouldn't skimp on the PSU as it's a very important part of the system.
I think the fans that come with the FT02 are fairly good, but you're right, there aren't really many decent radiator fans once you go above 120mm.
Also there's not a lot of choice when it comes to 180mm radiators, but there are some. It's hard to tell how good they are due to not having much to compare them with.
If my maths are right:
180x540mm (i.e. 180mm x 3) radiator does give 97200mm² of surface area.
140x560mm (i.e. 140mm x 4) radiator does give 78400mm² of surface area.
120x480mm (i.e. 120mm x 4) radiator does give 57600mm² of surface area.
I appreciate that thickness will also play a part, but with a 180x3 rad you get more surface area than with 2 x 360mm (120x3) radiators. Surely at that point you can run less effective fans and get away with it?
I'm no watercooling expert when it comes down to the math of things. But that doesn't look very right. Either way 2 360s will run a CPU and 2 GPUs no problem.

I've been reading all your comments about water cooling and I've found them really interesting. It's certainly an interesting field with lots of options!
Updates:
1) I've now taken delivery of my components and they're in excellent condition and all working.
2) I've just ordered a case Sliverstone FT02. I appreciate it's possibly not the most flexible case for water cooling but there's something about it's design that i really liked, so that should arrive mid week.
3) I've been researching PSU's (in my lunch breaks) and i'm settling on a decision between Corsair and beQuiet. Both offer long warranties and seem highly regarded. I'll just have to see which comes up on offer first! After the advice here i think something around 600w should be more than adequate for my needs.
650watt or around there is about all you will need. I suggest Corsair, Enermax,Silverstone, kingwin, Fractal Design(new to the market in psus), Nzxt hale 90(gold rated version) and IMO the best one Seasonic. Any of the brands are great options.
