How long will they keep the old blocks in production for? I have 980s and want to watercool some time this year but not sure if I should buy the blocks now even though I won't get a radiator and pump for a while yet. Not planning on upgrading my GPUs for a year or two minimum.

Probably for the entire lifespan of Pascal. You can still get blocks for 780 series, unless of course they took them out of assembly recently (I haven't checked).
