With regards risers.. can you put more than one M2 on (any of) them?

The waterblock seems kind of pointless, but an M2 riser doesn't seem like a terrible idea for me ole x79 board

Run 2 PCI-E extensions.

As far as the cooling goes in the decently ventilated case, you won't get it so hot unless you are doing some mental rendering. Just a heatsink would do the job to be sure. MSI is doing something like that on their new boards. Waterblock is just complete overkill. May look nice from an esthetic point of view, or if you just want all your temperatures low. But it is good that you at least have the option to go with it, if it's needed.

I can see the one with the WB being OK though but man they are expensive !

They are the first ones on the market and they dictate the price. Once others start doing it the price will drop.
